  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 3 large eggs
  • 1 cup unsalted butter
  • 1 cup 2% milk
  • 1 box Jell-O pistachio pudding mix
  • 1 cup white sugar
  • 1/2 cup chopped pistachios
  • 1 cup icing sugar
  • as needed 2% milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan and set aside.
  3. In one bowl, whisk together flour, salt, and baking powder.
  4. In another bowl, beat eggs until fluffy; mix in melted butter, milk, and pudding mix until smooth.
  5. Gradually combine wet and dry mixtures using a rubber spatula until just combined.
  6. Fold in half of the chopped pistachios.
  7. Pour the batter into the prepared loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
  8. Let cool before transferring to a wire rack. Optionally glaze with icing sugar mixed with milk.
