  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter (softened)
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 3 tablespoons unsalted butter (melted)
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Prepare the peach filling by combining cubed peaches with sugar, lemon juice, cornstarch, and water in a saucepan over medium heat until thickened; let cool.
  2. Mix bread flour, sugar, yeast, and salt in one bowl. In another bowl, whisk warm milk, heavy cream, egg, tangzhong, and vanilla. Combine wet ingredients with dry until a soft dough forms; knead until smooth.
  3. Roll out the dough into a rectangle, spread softened butter over it, and sprinkle with brown sugar and cinnamon. Add cooled peach filling and roll tightly into a log.
  4. Cut into pieces and arrange in a greased baking dish; let rise until doubled in size.
  5. Preheat oven to 350°F (175°C) and bake for about 30 minutes until golden brown. Once cooled slightly, add crumb topping made from mixing melted butter with brown sugar, flour, and cinnamon.
  6. Finally, drizzle with cream cheese glaze made from whisking together melted butter, cream cheese, powdered sugar, and heavy cream.
