  • 1 tbsp unsalted butter
  • 1 brown onion (finely chopped)
  • 2 garlic cloves (minced)
  • 3 carrots (peeled and diced)
  • 3 waxy potatoes (diced)
  • 4 cups chicken broth
  • ½ cup frozen green peas
  • 4 tbsp full-fat sour cream (room temperature)
  • 4 tbsp chopped fresh dill (divided)

Instructions

  1. Prep all ingredients: chop the onion, mince garlic, dice potatoes and carrots, and chop the dill.
  2. In a large pot over medium-low heat, melt the butter. Add garlic and onion; cook until fragrant.
  3. Stir in carrots and scallions; cook for an additional 2 minutes.
  4. Add diced potatoes, frozen peas, chicken broth, salt, pepper, marjoram, turmeric, nutmeg, and bay leaf; bring to a boil.
  5. Reduce heat and simmer for 15 minutes until vegetables are tender.
  6. Remove from heat; stir in sour cream and dill. Adjust seasoning if needed before serving.
