  • 10 oz smoked sausage
  • 1 large onion
  • 4 carrots
  • 2 celery stalks
  • 1.25 cups leek
  • 4 garlic cloves
  • 4 cups chicken broth
  • 2.25 lb potatoes
  • bay leaves
  • marjoram
  • salt
  • pepper
  • nutmeg
  • half & half
  • parsley

Instructions

  1. In a large pot over medium heat, cook the bacon until crispy (about 5–7 minutes). Remove bacon but keep the fat.
  2. Add sausage slices to the pot and cook until browned.
  3. Stir in butter, then add chopped onion, carrots, celery, leeks, and garlic; sauté for 5–7 minutes until softened.
  4. Pour in chicken broth and add diced potatoes along with bay leaves, marjoram, salt, pepper, and nutmeg. Bring to a boil.
  5. Reduce heat and simmer covered for about 20 minutes until potatoes are tender.
  6. Remove bay leaves and stir in half & half for creaminess before serving.
