  • 5 Tbsp butter (divided)
  • 1 32 oz package frozen whole kernel corn (thawed)
  • 1 1/2 cups half and half
  • 3 large eggs
  • 2 Tbsp granulated sugar
  • 1/2 tsp salt
  • 1/8 tsp ground nutmeg
  • 1 1/2 cups sharp white cheddar or pepper-jack cheese (divided)
  • 1 sleeve round butter crackers (crushed and divided)

Instructions

  1. Preheat your oven to 325°F and butter a 13×9-inch baking dish with 1 Tbsp of butter.
  2. In a medium bowl, whisk together half and half, eggs, sugar, salt, and nutmeg until well combined.
  3. In a large bowl, mix thawed corn with the egg mixture, 3/4 cup of cheese, and 1/2 cup crushed crackers.
  4. Pour the corn mixture into the prepared baking dish and bake for about 30 minutes.
  5. In the meantime, melt remaining butter and toss with remaining cracker crumbs.
  6. After baking for 30 minutes, remove from the oven, sprinkle with reserved cheese and buttered cracker crumbs, then return to bake for an additional 20-30 minutes until golden brown.
  7. Let it stand for about 5 minutes before serving.
