  • 3/4 cup freeze-dried strawberries (crushed)
  • 3/4 cup vanilla wafer cookies (crushed)
  • 2 tbsp unsalted butter (melted)
  • 1/2 cup powdered sugar
  • 12 tbsp milk
  • 12 drops pink food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt; gradually mix into the wet ingredients until just combined.
  5. Shape dough into balls and place them on the prepared baking sheet; slightly flatten each ball.
  6. Bake for 10–12 minutes until edges are golden.
  7. While cookies bake, mix crushed strawberries and vanilla wafers with melted butter until crumbly.
  8. Press the strawberry mixture onto warm cookies after removing them from the oven.
  9. Cool completely on a rack before drizzling with icing made from powdered sugar mixed with milk.
