  • 2 lbs lean ground beef
  • 6 oz crushed corn chips
  • 1 ½ cups salsa (corn and black bean preferred)
  • 2 large eggs
  • 1 oz taco seasoning
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Preheat your oven to 350°F.
  2. In a Ziploc bag, crush corn chips using a rolling pin.
  3. In a large bowl, combine ground beef, eggs, crushed chips, and half the salsa.
  4. Season with taco seasoning, salt, pepper, and garlic powder; mix until just combined.
  5. Incorporate one cup of shredded cheese into the mixture.
  6. Line a loaf pan with aluminum foil and spray with cooking spray.
  7. Press the meat mixture into the pan and top with remaining salsa and cheese.
  8. Bake for 40 minutes; then bake an additional 10-15 minutes until internal temperature reaches 160°F.
  9. Let rest for 5 minutes before slicing and serving.
