Tuscan Artichoke Tomato Salad is a refreshing and vibrant summer dish that perfectly combines marinated artichokes, juicy tomatoes, and fresh herbs.

  • 10 ounces cherry tomatoes (halved)
  • 1/2 medium red onion (thinly sliced)
  • 2 tablespoons fresh basil (thin strips)
  • 2 tablespoons fresh chives (finely diced)
  • 12-ounce jar of marinated artichoke hearts (strained)
  • 15-ounce can of cooked chickpeas (strained and rinsed)
  • 1 tablespoon capers
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables by halving the cherry tomatoes, slicing the red onion, chopping the chives, and cutting the basil into thin strips.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, dried parsley, salt, garlic powder, and black pepper until well blended.
  3. In a large mixing bowl, combine the chopped tomatoes, red onion, chives, basil, marinated artichoke hearts, chickpeas, and capers. Pour the vinaigrette over the top and gently mix until everything is coated.
  4. Serve immediately or chill in the refrigerator for 1-2 hours to enhance flavors.
