  • 4 cups seedless watermelon (cubed)
  • 3 cups English cucumbers (sliced)
  • 1 jalapeño pepper (de-seeded and diced)
  • Juice and zest of 1 lime
  • 2 tbsp fresh basil or mint (sliced)
  • Small pinch of sea salt

Instructions

  1. Wash all produce thoroughly.
  2. Cut the watermelon into cubes after removing the rind.
  3. Slice the cucumbers into thin rounds.
  4. De-seed and finely dice the jalapeño pepper.
  5. In a large bowl, combine watermelon, cucumber, jalapeño, lime juice and zest, fresh herbs, and sea salt.
  6. Gently toss to mix well.
  7. Cover with plastic wrap and refrigerate for at least one hour before serving.
