  • 250 grams ripe mixed cherry tomatoes
  • 2 cloves of garlic, finely sliced
  • 34 small sprigs of thyme
  • 3 Tbsp Babylonstoren Extra Virgin Coratina Olive oil
  • 1 Tbsp balsamic vinegar (optional)
  • Salt & Pepper
  • 200 grams crumbled feta cheese
  • ¼ cup + 2 Tbsp full-fat cream cheese
  • Zest from ½ a lemon
  • 2 Tbsp Babylonstoren Extra Virgin Coratina Olive oil
  • A drizzle of honey
  • A small handful of fresh basil leaves or shredded larger basil
  • Griddle fried ciabatta with olive oil

Instructions

  1. Preheat your oven to 180C/350F.
  2. In a baking dish, combine cherry tomatoes, sliced garlic, thyme, olive oil, balsamic vinegar (optional), salt, and pepper. Roast for 30 minutes until blistered.
  3. In a food processor, blend crumbled feta, cream cheese, lemon zest, and olive oil until smooth.
  4. Spread the whipped feta on a serving plate and top with roasted tomatoes.
  5. Drizzle with honey and garnish with basil leaves before serving.
