  • 1 large sweet potato (12 ounces), diced
  • 1 lb flat iron steak, diced
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 4 green onions, sliced
  • 2 tbsp coconut aminos
  • Salt and cracked black pepper to taste

Instructions

  1. Microwave diced sweet potatoes with salt in a covered bowl for 4-6 minutes until just tender.
  2. Heat olive oil in a skillet over high heat. Cook steak in a single layer for about 10 minutes, turning occasionally until browned. Remove from skillet.
  3. In the same skillet, add remaining oil and sauté sweet potatoes until browned (3-4 minutes). Add garlic and sauté until fragrant (1 minute).
  4. Mix in bell peppers and green onions; cook until tender (3-4 minutes).
  5. Return steak along with juices to the skillet, add coconut aminos, and toss everything together for an additional minute.
