Prepare the Dough
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg, apple cider, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cookies
- Using a cookie scoop, drop dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- If desired, sprinkle chopped walnuts or dried cranberries on top of each cookie.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
