Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider preferably fresh
  • 1 teaspoon vanilla extract
Optional Toppings
  • 1/2 cup chopped walnuts optional
  • 1/2 cup dried cranberries optional

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg, apple cider, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cookies
  1. Using a cookie scoop, drop dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  2. If desired, sprinkle chopped walnuts or dried cranberries on top of each cookie.
  3. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  4. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
