Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup buttermilk or milk with vinegar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup peeled and diced apples preferably Granny Smith
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter melted

Method
 

Prepare the Muffin Batter
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the buttermilk, vegetable oil, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
Make the Streusel Topping
  1. In a small bowl, combine the flour, brown sugar, and cinnamon.
  2. Add the melted butter and mix until crumbly.
Bake the Muffins
  1. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Sprinkle the streusel topping evenly over the batter in each cup.
  3. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  4. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
