Salad Base
  • 4 cups mixed greens such as arugula, spinach, and kale
  • 1 cup red cabbage shredded
  • 1 cup carrots shredded
Fruits and Nuts
  • 1 cup apples diced, preferably a sweet variety
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts chopped
Cheese
  • 1 cup feta cheese crumbled
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, red cabbage, and shredded carrots.
  2. Add the diced apples, dried cranberries, chopped walnuts, and crumbled feta cheese.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, minced garlic, salt, and pepper.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine.
  2. Serve immediately or refrigerate for up to 30 minutes before serving.
