Ingredients
  

  • 1 lb cherry tomatoes halved or quartered
  • 3 ears corn cooked, shucked and cut off the cob
  • 2 avocados peeled, pitted and sliced
  • 1/2 red onion medium, thinly sliced
  • 1/4 cup cilantro chopped (1/2 small bunch)
  • 2 Tbsp extra virgin olive oil
  • 2 to 3 Tbsp lime juice from 1 to 2 limes
  • 2 garlic cloves pressed or finely minced
  • 1 tsp sea salt or 3/4 tsp table salt
  • 1/8 tsp black pepper

Method
 

  1. Prepare the ingredients by washing and halving or quartering the cherry tomatoes, cooking the corn, and slicing the avocados.
  2. In a large salad bowl, toss in the halved cherry tomatoes and freshly cut corn kernels.
  3. Gently add in the sliced avocado and thinly sliced red onion.
  4. Stir in the chopped cilantro and pressed garlic cloves.
  5. Drizzle olive oil over the salad mix and squeeze in lime juice, then season with salt and black pepper.
  6. Gently toss everything together until well combined.
  7. Serve immediately or chill for about half an hour before serving.
