Gather all your ingredients: mayonnaise, sourdough bread, white cheddar cheese, cooked bacon cut into quarters, thinly sliced pear, and fig jam or dried figs.
Spread mayonnaise on one side of each slice of sourdough bread.
On two slices of bread (mayo side down), layer with a slice of white cheddar cheese, a dollop of fig jam, pear slices, and crispy bacon pieces. Top with another slice of cheese and the second piece of bread (mayo side facing out).
Place a griddle or skillet over medium heat and place your assembled sandwiches onto the surface. Press down gently with a spatula.
Cook each side for about 1-2 minutes or until lightly browned and crispy. Flip and repeat on the other side.
Remove sandwiches from the skillet and cut each sandwich in half with a sharp knife.
Serve hot and fresh, optionally with a simple salad or crunchy chips.
