Ingredients
  

Fritter Batter
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp granulated sugar
  • 1/2 tsp salt
  • 1 large egg
  • 1/2 cup milk
  • 1 tsp vanilla extract
Apple Filling
  • 2 medium apples peeled, cored, and diced
  • 1 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tbsp lemon juice
Topping
  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • 1/2 tsp vanilla extract

Method
 

Prepare the Apple Filling
  1. In a mixing bowl, combine diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Toss to coat evenly.
  2. Set aside to allow the flavors to meld.
Make the Fritter Batter
  1. In another bowl, whisk together flour, baking powder, sugar, and salt.
  2. In a separate bowl, beat the egg, then add milk and vanilla extract. Mix well.
  3. Combine the wet ingredients with the dry ingredients until just mixed; do not overmix.
Combine and Bake
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Fold the apple filling into the fritter batter until evenly distributed.
  3. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake for 20-25 minutes or until golden brown and cooked through.
Prepare the Topping
  1. In a small bowl, mix powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the warm fritters before serving.
