Baked Cajun Salmon with Avocado

Ingredients
  

  • 4 fillets salmon about 6 ounces each
  • 2 tablespoons Cajun seasoning store-bought or homemade
  • 2 tablespoons olive oil or avocado oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 large avocado diced; substitute with mango if desired
  • fresh cilantro for garnish
  • salt to taste
  • pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a medium-sized bowl, combine the Cajun seasoning, olive oil, and lemon juice. Stir until a smooth paste forms.
  3. Place the salmon fillets on a baking sheet lined with parchment paper and rub the Cajun mixture over each fillet.
  4. Bake the salmon in the preheated oven for about 15-20 minutes, until it flakes easily with a fork.
  5. Dice the avocado and toss it with salt, pepper, and a squeeze of lemon juice.
  6. Let the salmon rest for a couple of minutes after baking.
  7. Serve the salmon topped with the avocado mixture and garnish with fresh cilantro.
