Method
Prepare the Oven and Pan
- Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
Mix Dry Ingredients
- In a large mixing bowl, combine rolled oats, whole wheat flour, brown sugar, baking powder, and salt.
Combine Wet Ingredients
- In another bowl, whisk together melted butter, egg, and vanilla extract until smooth.
Combine Mixtures
- Pour the wet ingredients into the dry ingredients and mix until just combined.
Prepare the Filling
- In a small bowl, toss the blueberries with lemon juice.
Assemble the Bars
- Spread half of the oatmeal mixture into the prepared baking pan. Layer the blueberries on top, then spread the remaining oatmeal mixture over the blueberries.
Bake
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
Cool and Cut
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into bars.
