Ingredients
  

Base Ingredients
  • 2 cups rolled oats old-fashioned
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar packed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
Filling Ingredients
  • 2 cups fresh blueberries or frozen
  • 1 tablespoon lemon juice

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
Mix Dry Ingredients
  1. In a large mixing bowl, combine rolled oats, whole wheat flour, brown sugar, baking powder, and salt.
Combine Wet Ingredients
  1. In another bowl, whisk together melted butter, egg, and vanilla extract until smooth.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and mix until just combined.
Prepare the Filling
  1. In a small bowl, toss the blueberries with lemon juice.
Assemble the Bars
  1. Spread half of the oatmeal mixture into the prepared baking pan. Layer the blueberries on top, then spread the remaining oatmeal mixture over the blueberries.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until golden brown.
Cool and Cut
  1. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into bars.
