Method
Prepare Sweet Potatoes
- Preheat the oven to 400°F (200°C).
- Boil the sweet potatoes in a large pot of salted water until tender, about 15-20 minutes.
- Drain and mash the sweet potatoes in a large mixing bowl.
Mix Chicken Filling
- In the same bowl, combine the shredded chicken, buffalo sauce, garlic powder, onion powder, salt, and black pepper.
- Mix until well combined.
Assemble Casserole
- Spread the mashed sweet potatoes evenly in the bottom of a 9x13 inch baking dish.
- Layer the buffalo chicken mixture over the sweet potatoes.
- Sprinkle the top with half of the cheddar cheese.
Bake
- Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is bubbly.
- Remove from oven and sprinkle with remaining cheddar cheese and green onions.
Serve
- Let cool for a few minutes before serving. Drizzle with additional buffalo sauce if desired.
