Buffalo Chicken Sweet Potato Casserole

Ingredients
  

Casserole Base
  • 2 large sweet potatoes peeled and cubed
  • 1 lb cooked chicken shredded
  • 1/2 cup buffalo sauce plus more for serving
  • 1 cup shredded cheddar cheese divided
  • 1/4 cup green onions sliced for garnish
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. Boil the sweet potatoes in a large pot of salted water until tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a large mixing bowl.
Mix Chicken Filling
  1. In the same bowl, combine the shredded chicken, buffalo sauce, garlic powder, onion powder, salt, and black pepper.
  2. Mix until well combined.
Assemble Casserole
  1. Spread the mashed sweet potatoes evenly in the bottom of a 9x13 inch baking dish.
  2. Layer the buffalo chicken mixture over the sweet potatoes.
  3. Sprinkle the top with half of the cheddar cheese.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is bubbly.
  2. Remove from oven and sprinkle with remaining cheddar cheese and green onions.
Serve
  1. Let cool for a few minutes before serving. Drizzle with additional buffalo sauce if desired.
