Cheesy Beef & Zucchini Casserole

Ingredients
  

  • 1 pound ground beef lean preferred
  • 2 medium zucchinis sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz, drained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté for about 2–3 minutes until the onion turns translucent.
  3. Add the ground beef to the skillet. Break it apart as it cooks and stir until browned all over, about 5–7 minutes. Drain excess fat if necessary.
  4. Stir in the sliced zucchini, drained diced tomatoes, Italian seasoning, salt, and pepper. Cook together for about 5 minutes.
  5. Transfer the beef and zucchini mixture into a greased 9×13-inch baking dish and spread it out evenly.
  6. Sprinkle both shredded cheddar and mozzarella cheese evenly across the top. Optionally, sprinkle breadcrumbs over the cheese layer.
  7. Bake in the preheated oven for about 25–30 minutes until bubbling and golden brown on top.
  8. Let it cool slightly before serving warm.
