Ingredients
  

Meat and Vegetables
  • 1 lb ground beef 85% lean
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 medium bell pepper diced
  • 1 pkg cauliflower rice about 10 oz
Seasonings
  • 1 tbsp taco seasoning store-bought or homemade
  • 1 tsp salt
  • 1 tsp black pepper
Cheese and Toppings
  • 1 cup cheddar cheese shredded
  • 1/2 cup sour cream for serving
  • 1/4 cup green onions sliced, for garnish

Method
 

Cook the Beef
  1. In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.
  2. Drain excess fat if necessary, then add the diced onion, garlic, and bell pepper. Cook for another 3-4 minutes until the vegetables are softened.
Add Cauliflower Rice and Seasonings
  1. Stir in the cauliflower rice, taco seasoning, salt, and black pepper. Mix well and cook for another 5-7 minutes until the cauliflower is tender.
Add Cheese and Serve
  1. Sprinkle the shredded cheddar cheese over the mixture, cover the skillet, and let it melt for about 2-3 minutes.
  2. Serve hot, topped with sour cream and green onions.
