Ingredients
  

Chicken
  • 2 pieces boneless, skinless chicken breasts grilled and sliced
Avocado Spread
  • 1 large ripe avocado mashed
  • 1 tablespoon lime juice to prevent browning
  • 1/4 teaspoon salt
Sandwich Assembly
  • 8 slices sourdough bread
  • 1 cup shredded cheese cheddar or mozzarella
  • 4 leaves romaine lettuce
  • 1 medium tomato sliced
Condiments
  • 2 tablespoons mayonnaise optional
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Avocado Spread
  1. In a bowl, mash the avocado and mix in lime juice and salt until smooth.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Season chicken breasts with salt and pepper, then grill for 6-7 minutes on each side or until fully cooked.
Assemble the Sandwich
  1. Spread the avocado mixture on one side of each slice of bread. Layer with grilled chicken, cheese, lettuce, and tomato. Top with another slice of bread.
Cook the Sandwich
  1. Heat a skillet over medium heat. Place the assembled sandwiches in the skillet and cook for 3-4 minutes on each side until the bread is golden brown and the cheese is melted.
Serve
  1. Remove from skillet, slice in half, and serve warm.
