Method
Prepare the crust
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a greased 9x9 inch baking pan.
- Bake for 10 minutes, then remove from oven and set aside to cool.
Make the filling
- In a large mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth.
- Add the melted chocolate, eggs, and vanilla extract. Mix until fully incorporated.
Bake the cheesecake
- Pour the filling over the cooled crust in the baking pan.
- Bake for 20 minutes, or until the center is set but slightly jiggly.
- Remove from the oven and let cool at room temperature, then refrigerate for at least 2 hours before cutting into bars.
