Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 cup semi-sweet chocolate chips melted
  • 3 large eggs
  • 1 tsp vanilla extract

Method
 

Prepare the crust
  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a greased 9x9 inch baking pan.
  4. Bake for 10 minutes, then remove from oven and set aside to cool.
Make the filling
  1. In a large mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth.
  2. Add the melted chocolate, eggs, and vanilla extract. Mix until fully incorporated.
Bake the cheesecake
  1. Pour the filling over the cooled crust in the baking pan.
  2. Bake for 20 minutes, or until the center is set but slightly jiggly.
  3. Remove from the oven and let cool at room temperature, then refrigerate for at least 2 hours before cutting into bars.
