Cinnamon Focaccia

A soft and airy dough with crispy golden edges and pockets filled with melted buttery cinnamon-sugar, drizzled with vanilla icing.

Ingredients
  

  • 2 cups warm water heated to about 110℉
  • 2 tsp active dry yeast
  • 1 tsp white granulated sugar
  • 4 cups bread flour spooned and leveled
  • 1.5 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter melted
  • 6 tbsp brown butter
  • 1/3 cup light brown sugar
  • 2 tsp cinnamon
  • 1 cup powdered sugar sifted
  • 1 tsp vanilla extract
  • 2.5 tbsp milk adjust for desired consistency

Method
 

  1. Activate the yeast by combining warm water and sugar, then sprinkle yeast over the mixture and let it sit until foamy.
  2. Mix bread flour and salt in a large bowl, then add the activated yeast mixture and olive oil, stirring until a sticky dough forms.
  3. Cover the bowl and refrigerate for at least 12 hours for the first rise.
  4. Grease a baking pan, add melted butter, deflate the dough, and place it in the pan. Cover and let it rise for 1.5 to 2 hours.
  5. Make brown butter in a saucepan over medium heat until golden and nutty.
  6. Combine brown butter, light brown sugar, and cinnamon in the saucepan until dissolved for the topping.
  7. Preheat the oven to 450℉, dimple the risen dough with wet fingertips, and drizzle the cinnamon topping over it.
