Ingredients
  

Base Ingredients
  • 1 cup rolled oats Use gluten-free if needed
  • 1/2 cup vanilla protein powder Whey or plant-based
  • 1/4 cup almond butter Can substitute with peanut butter
  • 1/4 cup honey Or maple syrup for vegan option
  • 1 teaspoon cinnamon Plus more for topping
  • 1/4 cup chopped walnuts Optional for added crunch
Topping
  • 2 tablespoons coconut flour For rolling
  • 1 teaspoon cinnamon For rolling

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine rolled oats, protein powder, almond butter, honey, cinnamon, and walnuts. Mix until well combined.
  2. If the mixture is too dry, add a little water or more almond butter until it holds together.
Form the Bites
  1. Scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
  2. In a small bowl, mix coconut flour and cinnamon for rolling.
  3. Roll each protein bite in the coconut flour mixture until evenly coated.
Chill and Serve
  1. Place the protein bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  2. Enjoy your cinnamon roll protein bites as a snack or post-workout treat!
