Prepare the Mixture
- In a mixing bowl, combine rolled oats, protein powder, almond butter, honey, cinnamon, and walnuts. Mix until well combined.
- If the mixture is too dry, add a little water or more almond butter until it holds together.
Form the Bites
- Scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
- In a small bowl, mix coconut flour and cinnamon for rolling.
- Roll each protein bite in the coconut flour mixture until evenly coated.
Chill and Serve
- Place the protein bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
