Ingredients
  

  • 2 cups jasmine rice
  • 13.5 ounce full-fat coconut milk
  • 1.5 cups water or coconut water
  • 0.5 teaspoon salt

Method
 

  1. Start by rinsing the jasmine rice in a fine mesh strainer until the water runs clear.
  2. In a medium saucepan, combine the full-fat coconut milk and water. Bring to a boil.
  3. Add salt and the rinsed jasmine rice, stir gently, and bring back to a simmer.
  4. Reduce heat to low, cover, and let simmer for 15-20 minutes.
  5. Remove from heat and let it rest covered for another 15 minutes.
  6. Fluff the rice gently with a fork before serving.
  7. Serve immediately or store in an airtight container in the refrigerator.
