Method
- Start by rinsing the jasmine rice in a fine mesh strainer until the water runs clear.
- In a medium saucepan, combine the full-fat coconut milk and water. Bring to a boil.
- Add salt and the rinsed jasmine rice, stir gently, and bring back to a simmer.
- Reduce heat to low, cover, and let simmer for 15-20 minutes.
- Remove from heat and let it rest covered for another 15 minutes.
- Fluff the rice gently with a fork before serving.
- Serve immediately or store in an airtight container in the refrigerator.
