CopyCat Panera Bread Chicken Noodle Soup

Ingredients
  

  • 2 boneless skinless chicken breast
  • 4 cups chicken broth
  • 2 cups water may need to add more
  • 4 carrots peeled and diced into bite-size pieces
  • 2 stalks celery diced into bite-size pieces
  • 1/2 onion diced
  • 1 tsp thyme
  • 1 leaf bay
  • 1 tsp garlic salt
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups egg noodles

Method
 

  1. Place chicken breasts into a large pot and pour in chicken broth and water to cover the chicken.
  2. Add diced carrots, celery, onion, thyme, bay leaf, garlic salt, salt, and pepper. Stir gently.
  3. Bring to a gentle boil, then reduce heat to low and cover. Let simmer for about 15 minutes until chicken is cooked.
  4. Remove chicken from pot, shred into bite-sized pieces, and return to pot.
  5. Stir in egg noodles and cook according to package instructions, about 5–7 minutes.
