Method
Prepare the Peppers
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
- Place the peppers upright in a baking dish.
Make the Filling
- In a mixing bowl, combine the shredded chicken, cream cheese, half of the cheddar cheese, sour cream, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Stuff the Peppers
- Spoon the chicken mixture into each bell pepper, packing it down gently.
Bake the Peppers
- Drizzle olive oil over the stuffed peppers and sprinkle the remaining cheddar cheese on top.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and golden.
Serve
- Remove from the oven and let cool for a few minutes before serving.
