Ingredients
  

For the Stuffed Peppers
  • 4 large bell peppers any color
  • 2 cups cooked chicken shredded
  • 1 cup cream cheese softened
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil for drizzling

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
  2. Place the peppers upright in a baking dish.
Make the Filling
  1. In a mixing bowl, combine the shredded chicken, cream cheese, half of the cheddar cheese, sour cream, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Stuff the Peppers
  1. Spoon the chicken mixture into each bell pepper, packing it down gently.
Bake the Peppers
  1. Drizzle olive oil over the stuffed peppers and sprinkle the remaining cheddar cheese on top.
  2. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.
