Creamy Salmon Pasta

Ingredients
  

Pasta
  • 12 oz Fettuccine or any pasta of choice
Salmon
  • 2 fillets Salmon skinless
Cream Sauce
  • 1 cup Heavy Cream
  • 1 cup Chicken Broth low sodium
  • 1 cup Parmesan Cheese grated
  • 2 cloves Garlic minced
  • 1 tbsp Olive Oil
  • 1 tsp Dried Basil
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
Garnish
  • 2 tbsp Fresh Parsley chopped

Method
 

Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Drain and set aside.
Prepare the Salmon
  1. In a skillet, heat olive oil over medium heat. Season salmon fillets with salt and pepper. Cook for about 4-5 minutes on each side until cooked through. Remove from skillet and flake into pieces.
Make the Cream Sauce
  1. In the same skillet, add minced garlic and sauté for 1 minute. Pour in chicken broth and bring to a simmer. Stir in heavy cream, Parmesan cheese, dried basil, salt, and pepper. Cook for 3-4 minutes until slightly thickened.
Combine and Serve
  1. Add the cooked pasta and flaked salmon to the cream sauce. Toss to combine and heat through for 1-2 minutes. Serve hot, garnished with fresh parsley.

Notes

For a lighter version, you can substitute heavy cream with half-and-half.
