Ingredients
  

Chicken and Marinade
  • 4 pieces boneless chicken breasts pounded to 1/2 inch thickness
  • 1 cup buttermilk for marinating
  • 2 tablespoons fresh dill chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Breading
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs for extra crunch
  • 1 teaspoon paprika
  • 1 teaspoon dried dill
Sandwich Assembly
  • 4 buns burger buns toasted
  • 1 cup leafy lettuce
  • 1 large tomato sliced
  • 1/2 cup pickles sliced
  • 1/4 cup mayonnaise optional

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine buttermilk, fresh dill, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts and ensure they are well coated. Cover and marinate in the refrigerator for at least 30 minutes.
Prepare the Breading
  1. In a shallow dish, mix together flour, panko breadcrumbs, paprika, and dried dill. Set aside.
Bread the Chicken
  1. Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the breadcrumb mixture, pressing lightly to adhere. Set aside on a baking sheet.
Cook the Chicken
  1. Heat a frying pan over medium-high heat and add enough oil to cover the bottom. Once hot, add the breaded chicken pieces and cook for 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Assemble the Sandwich
  1. Spread mayonnaise on the toasted buns. Layer with lettuce, a piece of crispy chicken, tomato slices, and pickles. Top with the other half of the bun and serve immediately.
