Ingredients
  

Chicken Cutlets
  • 4 pieces boneless, skinless chicken breasts pounded to 1/2 inch thickness
Breading Mixture
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs for extra crunch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Cooking Oil
  • 2 tablespoons olive oil for drizzling

Method
 

Prepare the Chicken
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pound the chicken breasts to an even thickness of about 1/2 inch using a meat mallet.
Set Up Breading Station
  1. In a shallow bowl, place the flour. In another shallow bowl, beat the eggs. In a third shallow bowl, mix the panko breadcrumbs with garlic powder, onion powder, paprika, salt, and pepper.
Bread the Chicken
  1. Dredge each chicken cutlet in flour, shaking off excess, then dip in the beaten eggs, and finally coat with the panko mixture, pressing gently to adhere.
Bake the Cutlets
  1. Place the breaded chicken cutlets on the prepared baking sheet. Drizzle with olive oil.
  2. Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through, flipping halfway through.
Serve
  1. Remove from the oven and let rest for a few minutes before serving. Enjoy with your favorite dipping sauce!

Notes
