Prepare the Chicken
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pound the chicken breasts to an even thickness of about 1/2 inch using a meat mallet.
Set Up Breading Station
- In a shallow bowl, place the flour. In another shallow bowl, beat the eggs. In a third shallow bowl, mix the panko breadcrumbs with garlic powder, onion powder, paprika, salt, and pepper.
Bread the Chicken
- Dredge each chicken cutlet in flour, shaking off excess, then dip in the beaten eggs, and finally coat with the panko mixture, pressing gently to adhere.
Bake the Cutlets
- Place the breaded chicken cutlets on the prepared baking sheet. Drizzle with olive oil.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through, flipping halfway through.
Serve
- Remove from the oven and let rest for a few minutes before serving. Enjoy with your favorite dipping sauce!
