Ingredients
  

Beef Roast
  • 3 pounds chuck roast trimmed of excess fat
Vegetables
  • 4 medium carrots peeled and cut into chunks
  • 3 stalks celery chopped
  • 1 large onion chopped
  • 4 cloves garlic minced
Liquids and Seasonings
  • 1 cup beef broth or stock
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 2 teaspoons salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Ingredients
  1. Trim excess fat from the chuck roast and season it with salt and pepper.
  2. Chop the carrots, celery, onion, and mince the garlic.
Sear the Roast (Optional)
  1. In a skillet, sear the roast on all sides over medium-high heat until browned, about 4-5 minutes per side.
Assemble in Crock Pot
  1. Place the chopped vegetables in the bottom of the crock pot.
  2. Add the seared roast on top of the vegetables.
  3. Pour the beef broth and Worcestershire sauce over the roast.
  4. Sprinkle thyme, salt, and pepper over everything.
Cook the Roast
  1. Cover the crock pot and cook on low for 8 hours or high for 4 hours, until the roast is tender.
Serve
  1. Remove the roast and vegetables from the crock pot, slice the roast, and serve with the vegetables.

Notes
