Prepare the Ingredients
- Trim excess fat from the chuck roast and season it with salt and pepper.
- Chop the carrots, celery, onion, and mince the garlic.
Sear the Roast (Optional)
- In a skillet, sear the roast on all sides over medium-high heat until browned, about 4-5 minutes per side.
Assemble in Crock Pot
- Place the chopped vegetables in the bottom of the crock pot.
- Add the seared roast on top of the vegetables.
- Pour the beef broth and Worcestershire sauce over the roast.
- Sprinkle thyme, salt, and pepper over everything.
Cook the Roast
- Cover the crock pot and cook on low for 8 hours or high for 4 hours, until the roast is tender.
Serve
- Remove the roast and vegetables from the crock pot, slice the roast, and serve with the vegetables.
