Ingredients
  

Meat and Beans
  • 1 lb ground beef or turkey
  • 1 can kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 can pinto beans drained and rinsed
Vegetables
  • 1 medium onion chopped
  • 1 medium bell pepper chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes with juice
Spices and Seasonings
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp paprika
Liquid
  • 1 cup beef broth or vegetable broth

Method
 

Prepare Ingredients
  1. Chop the onion and bell pepper, and mince the garlic.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
Combine in Crockpot
  1. In the crockpot, combine the cooked ground beef, chopped onion, bell pepper, minced garlic, kidney beans, black beans, pinto beans, diced tomatoes, chili powder, cumin, salt, black pepper, paprika, and beef broth.
Cook
  1. Cover and cook on low for 8 hours or on high for 4 hours.
Serve
  1. Once cooked, stir well and serve hot. Enjoy with toppings like cheese, sour cream, or green onions if desired.
