  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic minced

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the diced cucumbers, crumbled feta cheese, halved cherry tomatoes, sliced red onion, and chopped parsley.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper until well combined.
