Prepare the Ingredients
- Dice the onion, slice the carrots and celery, and cube the chicken.
- Minced the garlic and set aside.
Cook the Chicken and Vegetables
- In a large pot, add the chicken, broth, carrots, celery, onion, and garlic.
- Bring to a boil over medium-high heat.
- Reduce heat and let simmer for 20 minutes or until the chicken is cooked through.
Add Noodles and Seasoning
- Add the egg noodles, thyme, salt, and pepper to the pot.
- Cook for an additional 10 minutes or until the noodles are tender.
Serve
- Ladle the soup into bowls and garnish with fresh parsley.
