Ingredients
  

Chicken and Broth
  • 1 lb boneless, skinless chicken breasts cubed
  • 6 cups chicken broth low sodium recommended
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup onion diced
Noodles and Seasoning
  • 2 cups egg noodles or any pasta of choice
  • 2 teaspoons garlic minced
  • 1 teaspoon thyme dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Ingredients
  1. Dice the onion, slice the carrots and celery, and cube the chicken.
  2. Minced the garlic and set aside.
Cook the Chicken and Vegetables
  1. In a large pot, add the chicken, broth, carrots, celery, onion, and garlic.
  2. Bring to a boil over medium-high heat.
  3. Reduce heat and let simmer for 20 minutes or until the chicken is cooked through.
Add Noodles and Seasoning
  1. Add the egg noodles, thyme, salt, and pepper to the pot.
  2. Cook for an additional 10 minutes or until the noodles are tender.
Serve
  1. Ladle the soup into bowls and garnish with fresh parsley.
  2. Serve hot and enjoy!
