Ingredients
  

  • 2 cups all-purpose flour plus 2 tablespoons
  • 1.25 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.75 cup white sugar
  • 0.5 cup softened unsalted butter
  • 1 tablespoon grated orange peel from about 2 oranges
  • 1 large egg
  • 0.5 cup fresh-squeezed orange juice 120ml
  • 1 cup powdered sugar
  • 0.5 orange grated peel
  • 1-2 tablespoons fresh-squeezed orange juice
  • 1 tablespoon melted unsalted butter

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, and salt until well combined. Set aside.
  3. In a large mixing bowl, beat together the softened unsalted butter and white sugar until creamy and light, about 2-3 minutes.
  4. Add the large egg and grated orange peel, and beat until well combined.
  5. Pour in the fresh-squeezed orange juice and mix until fully incorporated.
  6. Gradually add the dry ingredient mixture into the wet ingredients, stirring gently until just combined.
  7. Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them about two inches apart. Bake for about 10 minutes or until lightly golden around the edges. Let cool on a wire rack before glazing.
