Easy Mediterranean Veggie Wraps

A vibrant medley of fresh vegetables, creamy hummus, and tangy feta wrapped in whole wheat tortillas, perfect for lunch or a light dinner.

Ingredients
  

  • 4 large whole wheat wraps or tortillas
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber thinly sliced
  • 1/2 cup red bell pepper thinly sliced
  • 1/2 cup yellow bell pepper thinly sliced
  • 1/4 cup red onion thinly sliced
  • 1 cup baby spinach or romaine lettuce
  • 1 cup hummus store-bought or homemade
  • 1/3 cup feta cheese crumbled
  • 1/4 cup kalamata olives sliced, optional
  • 2 tablespoons olive oil or lemon juice optional drizzle
  • to taste salt and black pepper

Method
 

  1. Wash all fresh produce. Slice cherry tomatoes in half, and thinly slice cucumbers, red and yellow bell peppers, and red onion.
  2. Lay out whole wheat wraps or tortillas on a clean surface.
  3. Spread a generous layer of hummus over each wrap, leaving about an inch around the edges.
  4. Layer sliced cucumbers, cherry tomatoes, bell peppers, onions, baby spinach or romaine lettuce, and sprinkle crumbled feta cheese on top. Add olives if desired.
  5. Roll up the wraps tightly, tucking in the sides as you go.
  6. Cut each wrap in half diagonally for easy handling and serve immediately or store for later.
