Wash all fresh produce. Slice cherry tomatoes in half, and thinly slice cucumbers, red and yellow bell peppers, and red onion.
Lay out whole wheat wraps or tortillas on a clean surface.
Spread a generous layer of hummus over each wrap, leaving about an inch around the edges.
Layer sliced cucumbers, cherry tomatoes, bell peppers, onions, baby spinach or romaine lettuce, and sprinkle crumbled feta cheese on top. Add olives if desired.
Roll up the wraps tightly, tucking in the sides as you go.
Cut each wrap in half diagonally for easy handling and serve immediately or store for later.
