Method
Prepare the Pie Crust
- Preheat the oven to 375°F (190°C). Roll out the pie crust and place it in the pie dish.
- Prick the bottom of the crust with a fork to prevent bubbling.
Make the Filling
- In a mixing bowl, combine the ricotta cheese, mozzarella cheese, eggs, basil, thyme, salt, and pepper. Mix well.
- Fold in the halved cherry tomatoes gently.
Assemble and Bake
- Pour the filling into the prepared pie crust, spreading it evenly.
- Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
- Let the pie cool for 10 minutes before slicing and serving.
