Ingredients
  

Pie Crust
  • 1 package store-bought pie crust or homemade
Filling
  • 2 cups cherry tomatoes halved
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Pie Crust
  1. Preheat the oven to 375°F (190°C). Roll out the pie crust and place it in the pie dish.
  2. Prick the bottom of the crust with a fork to prevent bubbling.
Make the Filling
  1. In a mixing bowl, combine the ricotta cheese, mozzarella cheese, eggs, basil, thyme, salt, and pepper. Mix well.
  2. Fold in the halved cherry tomatoes gently.
Assemble and Bake
  1. Pour the filling into the prepared pie crust, spreading it evenly.
  2. Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
  3. Let the pie cool for 10 minutes before slicing and serving.
