In a large mixing bowl, combine 1 cup of warm water (about 110°F) with 1 tablespoon of sugar. Gently sprinkle the active dry yeast on top and let it sit for about 5-10 minutes until foamy.
Once the yeast is foamy, stir in the olive oil, minced or roasted garlic, dried mixed herbs, and salt. Gradually add in 2½ cups of flour until you have a soft, shaggy dough.
Transfer your dough onto a lightly floured surface or keep it in your mixing bowl. Knead by hand for about 6-8 minutes or use a mixer until the dough is smooth and elastic, adding half of the grated parmesan halfway through.
Place your kneaded dough into a greased bowl and cover it. Set it in a warm location to rise until doubled in size, about an hour.
After rising, punch down the dough gently, divide it into three equal parts, roll each into ropes, and braid them together. Place on a parchment-lined baking sheet.
