- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the diced potatoes, sliced carrots, and zucchini. Drizzle in the olive oil and add the minced garlic along with thyme, rosemary, salt, and pepper. Mix until evenly coated.
- Spread the vegetable mixture in a single layer on the prepared baking sheet. Roast for about 25-30 minutes, stirring halfway through.
- Once roasted, sprinkle freshly chopped parsley over the top before serving warm.
