Ingredients
  

Chicken Marinade
  • 1 pound boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon salt
Bowl Ingredients
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup kalamata olives, pitted

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken breasts and coat well. Marinate for at least 15 minutes.
Prepare Tzatziki Sauce
  1. In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, and salt. Stir until well combined and refrigerate until ready to use.
Cook the Chicken
  1. Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let rest for a few minutes before slicing.
Assemble the Bowls
  1. In each bowl, layer cooked quinoa, sliced grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives. Drizzle with tzatziki sauce before serving.
