Method
Marinate the Chicken
- In a mixing bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Prepare Tzatziki Sauce
- In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt until well combined. Refrigerate until ready to serve.
Cook Couscous
- In a pot, bring chicken broth and salt to a boil. Stir in couscous and olive oil, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
Grill Chicken
- Preheat the grill to medium-high heat. Grill marinated chicken for about 6-7 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C).
Serve
- Serve grilled chicken over couscous with a generous dollop of tzatziki sauce on top.
