Ingredients
  

Chicken Marinade
  • 4 pieces chicken breasts boneless, skinless
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt plain
  • 1 medium cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon fresh dill chopped
  • 1/2 teaspoon salt
Couscous
  • 1 cup couscous
  • 1 cup chicken broth or water
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Prepare Tzatziki Sauce
  1. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt until well combined. Refrigerate until ready to serve.
Cook Couscous
  1. In a pot, bring chicken broth and salt to a boil. Stir in couscous and olive oil, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
Grill Chicken
  1. Preheat the grill to medium-high heat. Grill marinated chicken for about 6-7 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C).
Serve
  1. Serve grilled chicken over couscous with a generous dollop of tzatziki sauce on top.
