Greek Lemon Rice

Ingredients
  

  • 1 cup long-grain white rice or basmati rice
  • 2 tablespoons olive oil
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 cups chicken or vegetable broth
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley or dill (chopped)
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper

Method
 

  1. Start by heating the olive oil in a medium saucepan over medium heat. Once hot, add the diced onion and sauté until it turns translucent—about 3 minutes.
  2. Next, stir in the minced garlic and uncooked rice. Toast the rice for about 1 minute until it becomes slightly golden.
  3. Carefully pour in the chicken or vegetable broth along with salt, black pepper, lemon juice, and lemon zest. Bring to a boil, then reduce heat to low, cover, and let simmer for about 18 minutes.
  4. Once cooking time is up, remove from heat but keep covered for another 5 minutes. Fluff with a fork before stirring in chopped parsley or dill.
