Start by heating the olive oil in a medium saucepan over medium heat. Once hot, add the diced onion and sauté until it turns translucent—about 3 minutes.
Next, stir in the minced garlic and uncooked rice. Toast the rice for about 1 minute until it becomes slightly golden.
Carefully pour in the chicken or vegetable broth along with salt, black pepper, lemon juice, and lemon zest. Bring to a boil, then reduce heat to low, cover, and let simmer for about 18 minutes.
Once cooking time is up, remove from heat but keep covered for another 5 minutes. Fluff with a fork before stirring in chopped parsley or dill.
