Ingredients
  

Grilled Chicken
  • 2 lbs chicken breasts boneless and skinless
  • 2 tbsp olive oil for marinating
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
Quinoa Base
  • 1 cup quinoa rinsed
  • 2 cups water or chicken broth
  • 1/2 tsp salt
Vegetable Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/4 cup feta cheese crumbled
  • 1 cup mixed greens
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Prepare the Chicken
  1. In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Add chicken breasts and marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat.
Grill the Chicken
  1. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked and juices run clear.
  2. Remove from grill and let it rest for 5 minutes before slicing.
Cook the Quinoa
  1. In a pot, bring water (or chicken broth) and salt to a boil.
  2. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed.
Prepare the Bowls
  1. In serving bowls, layer cooked quinoa, sliced grilled chicken, and top with cherry tomatoes, cucumber, bell pepper, avocado, feta cheese, and mixed greens.
  2. Drizzle with dressing made from olive oil, lemon juice, honey, salt, and pepper.
