Ingredients
  

Cupcake Base
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
Slime Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 3 tbsp green food coloring or to desired color
  • 1 tbsp corn syrup for shine
Decoration
  • 12 pieces candy eyeballs for topping

Method
 

Prepare Cupcakes
  1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool completely.
Make Slime Frosting
  1. In a mixing bowl, beat the softened butter until creamy.
  2. Gradually add powdered sugar, alternating with milk, and mix until smooth.
  3. Add vanilla extract, green food coloring, and corn syrup, mixing until well combined and fluffy.
Decorate Cupcakes
  1. Once the cupcakes are completely cool, use a piping bag to swirl the slime frosting on top.
  2. Top each cupcake with a candy eyeball for a spooky effect.
