Ingredients
  

Peppers
  • 4 whole Bell Peppers Any color, tops cut off and seeds removed
Ricotta Filling
  • 15 oz Ricotta Cheese Whole milk ricotta preferred
  • 1 cup Fresh Spinach Chopped
  • 1/2 cup Parmesan Cheese Grated
  • 1 tbsp Fresh Basil Chopped
  • 1 tbsp Fresh Parsley Chopped
  • 1 clove Garlic Minced
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
Topping
  • 1/2 cup Mozzarella Cheese Shredded

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. Place the peppers upright in a baking dish.
Make the Filling
  1. In a mixing bowl, combine ricotta cheese, chopped spinach, grated Parmesan, basil, parsley, minced garlic, salt, and black pepper. Mix well until combined.
Stuff the Peppers
  1. Spoon the ricotta mixture into each bell pepper, packing it tightly.
  2. Top each stuffed pepper with shredded mozzarella cheese.
Bake
  1. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 5-10 minutes, until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let cool slightly before serving. Enjoy your herby ricotta stuffed peppers!
