  • 2 cups cooked chicken shredded or diced
  • 1 cup Greek yogurt plain, non-fat
  • 1 cup cottage cheese low-fat
Vegetable Ingredients
  • 2 cups fresh spinach chopped
  • 1 cup artichoke hearts canned or frozen, drained and chopped
  • 1 cup bell pepper diced
Seasonings and Toppings
  • 1 cup shredded mozzarella cheese for topping
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Oven and Casserole
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked chicken, Greek yogurt, cottage cheese, spinach, artichoke hearts, bell pepper, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
Assemble and Bake
  1. Transfer the mixture into a greased casserole dish, spreading it evenly.
  2. Top with shredded mozzarella cheese.
  3. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let it cool for a few minutes before serving.
