Ingredients
  

Shrimp and Sauce
  • 1 pound large shrimp peeled and deveined
  • 1/4 cup honey
  • 1/4 cup soy sauce low sodium preferred
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1 tablespoon olive oil for cooking
Rice and Vegetables
  • 2 cups cooked rice white or brown
  • 1 cup broccoli florets steamed
  • 1 cup bell pepper sliced
  • 1 cup carrots sliced
  • 2 green onions sliced for garnish

Method
 

Prepare the Sauce
  1. In a bowl, mix together honey, soy sauce, minced garlic, and minced ginger.
  2. Set the sauce aside for later use.
Cook the Shrimp
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink.
  3. Pour the honey garlic sauce over the shrimp and cook for an additional 2-3 minutes, stirring to coat the shrimp evenly.
Assemble the Bowls
  1. In serving bowls, add a portion of cooked rice.
  2. Top with the honey garlic shrimp and arrange the steamed broccoli, sliced bell pepper, and carrots around the shrimp.
  3. Garnish with sliced green onions before serving.
