Prepare the Meatballs
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, ginger, soy sauce, salt, and pepper.
- Mix until well combined, then form into meatballs about 1 inch in diameter.
- Place the meatballs on a baking sheet lined with parchment paper.
Bake the Meatballs
- Bake the meatballs in the preheated oven for 20-25 minutes or until cooked through (internal temperature should reach 165°F).
Make the Sauce
- In a skillet over medium heat, combine honey, soy sauce, minced garlic, rice vinegar, and sesame oil.
- Bring to a simmer and cook for 2-3 minutes.
- Stir in the cornstarch mixture and cook until the sauce thickens, about 1-2 minutes.
Combine and Serve
- Add the baked meatballs to the skillet and toss to coat in the sauce.
- Serve warm, garnished with sesame seeds and green onions if desired.
