Ingredients
  

Meatball Ingredients
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs preferably panko
  • 1 large egg beaten
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tsp soy sauce low sodium
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Honey Garlic Teriyaki Sauce
  • 1/4 cup honey
  • 1/4 cup soy sauce low sodium
  • 2 cloves garlic minced
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • 1 tbsp sesame oil

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, ginger, soy sauce, salt, and pepper.
  3. Mix until well combined, then form into meatballs about 1 inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper.
Bake the Meatballs
  1. Bake the meatballs in the preheated oven for 20-25 minutes or until cooked through (internal temperature should reach 165°F).
Make the Sauce
  1. In a skillet over medium heat, combine honey, soy sauce, minced garlic, rice vinegar, and sesame oil.
  2. Bring to a simmer and cook for 2-3 minutes.
  3. Stir in the cornstarch mixture and cook until the sauce thickens, about 1-2 minutes.
Combine and Serve
  1. Add the baked meatballs to the skillet and toss to coat in the sauce.
  2. Serve warm, garnished with sesame seeds and green onions if desired.
